It’s officially the weekend, which means extra time to spend in the sunshine, aimlessly strolling the farmer’s market, exploring your neighbourhood, gardening and laughing with friends and family. It’s the two days a week you can escape from the stress of work and the lengthy to do list to just spend time enjoying your life. The weekend truly is one of the greatest things and definitely the best time of the week 😉 I hope you have some fun plans for your weekend.
I love recipe testing and weekends are the perfect time to get messy and creative in the kitchen. I think it’s time you pull out those dusty cookbooks or explore your Pinterest page to find some cooking inspiration. Taking time to do things we love is important and I believe this is what weekends should be about. Do the things you dream about, visit places you fantasize exploring and check something off your wish list. Weekends are about finding yourself and exploring new places and meeting new people along the way.
I’ve got a perfect recipe for you to try this weekend. My easy fried rice brings comfort and complete satisfaction. It’s one of those recipes I crave and one that certainly soothes the soul. You can even switch out the rice for cauliflower rice. Just grate some cauliflower and add it in place of the brown rice.
Easy Fried Rice
- 2 Tbsp. grape seed oil
- 2 eggs
- 1⁄2 large white onion, diced
- 3 carrots, diced
- Salt and pepper to taste
- 1 1⁄4 cup frozen peas
- 2 cups cooked brown rice
- 3-4 Tbsp. tamari sauce
- 1 1⁄2 tsp sesame oil
- 2 tsp sriracha
- 1 scallion, chopped
- Use a fork to beat eggs in a small bowl. In a large skillet heat 1⁄2 Tbsp. oil over low heat and pour in your beaten eggs. Cook eggs for a few minutes, stirring with a wooden spoon to scramble. Once cooked, remove eggs from the pan and reserve for later.
- Add remaining oil to the skillet and sauté onions and carrots over medium-low heat until slightly softened. Season with salt and pepper.
- Add rice, tamari sauce, sesame oil, sriracha, and cooked eggs, stir to combine.
- Cook about 3-5 minutes, stir in peas and cook until everything is heated through. Remove from heat and sprinkle with chopped scallions.
