Spring is on it’s way! The suns rising earlier, the birds are chirping and the flowers are starting to poke through the frost covered ground. I can feel the change happening and am soooo ready! This winter might not have been the worst but it was cold and the winds have been bone chilling. The days have been dark and gloomy and I am ready for some sunshine on my face. Spring has so much to offer but most of all it means we are one step closer to farmer’s market season! Yay!!
There’s nothing like mornings spent loading up on fresh veggies and chatting with the farmers. Wandering around in the fresh air filling your super cute canvas bag with leafy greens, sweet fruit and bright flowers. How can any one say no to that?
This is the perfect salad to transition between the winter blues and fresh food of summer. Hearty kale loaded with crisp veggies and slathered in a delicious citrus avocado cream dressing. Perfect balance between fresh and comfort.

- 4 cups kale, shredded
- 1/2 cucumber, diced
- 2 bell peppers, diced
- 1 carrot, grated
- Dressing:
- 1 avocado
- 3 Tbsp lemon juice
- 1/4 cup + 1 Tbsp olive oil
- 1/4 cup parsley
- 1 tsp maple syrup
- 1 Tbsp water
- 1/4 tsp garlic powder
- 1/2 tsp onion powder
- salt and pepper to taste
- Blend all the dressing ingredients until creamy and toss with the salad fixings in a large bowl.
- Serve on it’s own or alongside your favourite protein.
