Summer may be considered the best time of year (for most people), but I’m not always a lover. I’m not going to lie, I’m more of an autumn girl myself. Don’t get me wrong. I love the longer days, sunshine, and warmer weather – but I really dislike humidity, extreme heat and sweating all the time. I’d rather it be sunny, mid to high 20’s, no humidity and a slight breeze. Oh and a popsicle in hand. Too me that’s the perfect summer 🙂
The good thing about the hot summer weather – It’s acceptable to eat frozen treats at any time of the day or all day if you choose. I feel like it’s a summer rule. Ice cream and popsicles are allowed to be considered food groups 🙂
Creamy dairy-free orange popsicles are the perfect addition to the extremely hot days of summer
Orange & Coconut Popsicles | Dairy-Free
Ingredients
- 1 can (400ml) full fat coconut milk
- 1 1/2 cups orange juice
- 1/2 tsp vanilla extract
- 1 Tbsp maple syrup
- diced fruit (optional)
Instructions
- Place everything except the fruit in a blender and puree until creamy. Should only take a few seconds.
- Pour into popsicle moulds and sprinkle in diced fruit.
- Place in the freezer to set.
