I’ve become obsessed with lemon. I’ve always liked lemon but ever since the weather started turning nicer all I’ve wanted to do is create recipes with lemon. Not a bad thing, but I hope you lovelies are just as into lemon as me 🙂 Let’s start with a crowd pleasing lemon loaf.
This lemon loaf is moist, full of lemon flavour and dairy free. It would also make a great dessert for Mother’s Day this Sunday with a nice cup of tea.
Lemon Loaf
Recipe Type: Dessert
Dairy free lemon loaf with spelt flour.
Ingredients
- 2 cups AP flour
- 1/2 cup spelt flour
- 1 Tbsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup raw sugar
- 1 cup almond milk
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp lemon extract
- 2 Tbsp lemon juice
- zest of one lemon
- 1/2 cup apple sauce
- 1/3 cup avocado oil
- Glaze
- 1/2 cup powdered sugar
- 1 Tbsp lemon juice
Instructions
- Preheat oven to 350 degrees
- In a large mixing bowl whisk together the dry ingredients.
- In a separate bowl whisk to combine the wet ingredients. Add the wet to the dry and stir till well combined.
- Pour the batter into a greased and parchement lined loaf pan and bake for approx. 50 minutes, or until the centre in no longer jiggly and the edges are lightly golden.
- Let cool completely and drizzle with the glaze – whisk together sugar and lemon juice till smooth.
