Glazed Dairy Free Lemon Loaf

I’ve become obsessed with lemon. I’ve always liked lemon but ever since the weather started turning nicer all I’ve wanted to do is create recipes with lemon. Not a bad thing, but I hope you lovelies are just as into lemon as me 🙂 Let’s start with a crowd pleasing lemon loaf.

This lemon loaf is moist, full of lemon flavour and dairy free. It would also make a great dessert for Mother’s Day this Sunday with a nice cup of tea.

Lemon Loaf
Recipe Type: Dessert
Dairy free lemon loaf with spelt flour.
  • 2 cups AP flour
  • 1/2 cup spelt flour
  • 1 Tbsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup raw sugar
  • 1 cup almond milk
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp lemon extract
  • 2 Tbsp lemon juice
  • zest of one lemon
  • 1/2 cup apple sauce
  • 1/3 cup avocado oil
  • Glaze
  • 1/2 cup powdered sugar
  • 1 Tbsp lemon juice
  1. Preheat oven to 350 degrees
  2. In a large mixing bowl whisk together the dry ingredients.
  3. In a separate bowl whisk to combine the wet ingredients. Add the wet to the dry and stir till well combined.
  4. Pour the batter into a greased and parchement lined loaf pan and bake for approx. 50 minutes, or until the centre in no longer jiggly and the edges are lightly golden.
  5. Let cool completely and drizzle with the glaze – whisk together sugar and lemon juice till smooth.
