Strawberry Lemon Cake | Dairy Free

 This weekend calls for a celebration – it’s Canada’s Birthday! And to celebrate, we’re making a delicious strawberry lemon cake. Fluffy lemon cake topped with a sweet strawberry icing, this cake is perfect for summer celebrations.



I could’t decide if this cake should be a simple sheet cake or a tall triple layer – so I made both. Equally delicious and a show stopper either way.

Fluffy lemon cake topped with sweet strawberry icing
  • 3 cups AP flour
  • 1 1/2 cups sugar
  • 1 1/2 Tbsp baking powder
  • 1/4 tsp salt
  • 3/4 cup avocado oil
  • 1 3/4 cup apple sauce
  • 1 tsp lemon extract
  • zest 1 lemon
  • 3 Tbsp lemon juice
  • 4 eggs
  • Icing:
  • 1/2 cup butter (vegan butter for dairy free)
  • 4 cups icing sugar
  • 1 Tbsp milk
  • 1/4 cup strawberries
  1. Preheat oven to 350 degrees. Grease your cake tins (3 – 6″ cake rounds or 1 – 13 by 9 high side sheet pan).
  2. In a large mixing bowl sift together the flour, sugar, baking powder and salt.
  3. In a separate bowl combine the oil, apple sauce, extract, zest, lemon juice and eggs.
  4. Add the wet to the dry and whisk to combine.
  5. Bake 35-40 minutes.
  1. Make the strawberry puree by pulsing strawberries in a food processor. Set aside.
  2. Cream the butter and gradually add the sugar in batches. Beating between each addition. Beat in the milk with the last addition of sugar.
  3. Set just under a quarter of the icing aside if you want to decorate with white or dye another colour.
  4. Add 2 Tbsp of the strawberry puree to the remaining icing and beat to combine.
  5. Ice the entire sheet cake with the strawberry icing and pipe rosettes with the white icing. For the layer cake, stake the cakes using the strawberry icing between each layer running your pallet knife along the edge after stacking to gently spread the icing and create the naked cake look. Then top the cake with the remaining strawberry icing and decorate using the white or dyed icing.
