Vegan cake perfect for autumn or winter
Ingredients
- 1 stick (1.2 cup) vegan butter
- 1 cup brown sugar
- 1 chia egg (1 Tbsp chia seeds + 3 Tbsp water)
- 1/2 cup apple sauce
- 1 cup non-dairy milk
- 2 cups AP flour
- 1 Tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 cup chopped apples (optional)
- Glaze:
- 1 1/2 cups powdered sugar
- 2-3 tsp non-dairy milk
- pinch of cinnamon
Instructions
- Preheat oven to 350 degrees
- In a large bowl cream together the butter and sugar using an electric whisk. Add the egg and beat to combine.
- Add the apple sauce and milk into the butter mixture and stir to combine.
- In a separate bowl combine the dry ingredients and whisk to remove any flour lumps.
- Add the dry mix to the wet and stir until well combined.
- Stir int he chopped apples and pour the batter into a grease bundt pan.
- Bake for 40-45 minutes or until the middle is set and the edges are lightly golden.
- Cool and drizzle with the glaze.
