Apple Bundt Cake with Cinnamon Glaze

Vegan cake perfect for autumn or winter
  • 1 stick (1.2 cup) vegan butter
  • 1 cup brown sugar
  • 1 chia egg (1 Tbsp chia seeds + 3 Tbsp water)
  • 1/2 cup apple sauce
  • 1 cup non-dairy milk
  • 2 cups AP flour
  • 1 Tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 cup chopped apples (optional)
  • Glaze:
  • 1 1/2 cups powdered sugar
  • 2-3 tsp non-dairy milk
  • pinch of cinnamon
  1. Preheat oven to 350 degrees
  2. In a large bowl cream together the butter and sugar using an electric whisk. Add the egg and beat to combine.
  3. Add the apple sauce and milk into the butter mixture and stir to combine.
  4. In a separate bowl combine the dry ingredients and whisk to remove any flour lumps.
  5. Add the dry mix to the wet and stir until well combined.
  6. Stir int he chopped apples and pour the batter into a grease bundt pan.
  7. Bake for 40-45 minutes or until the middle is set and the edges are lightly golden.
  8. Cool and drizzle with the glaze.
