One Bowl Chocolate Chip Zucchini Loaf

Who else destroys half their kitchen and uses all the mixing bowls when baking?

I love baking and normally my kitchen looks like a disaster zone when I’m done with multiple bowls, measuring cups, and flour covering the counter, BUT this recipe cuts down on the mess! One Bowl Chocolate Zucchini Loaf is delicious, dairy-free, and can all be made in ONE bowl.

Perfect way to use up the zucchinis from your late summer garden haul.

 

One Bowl Chocolate Chip Zucchini Loaf:

2 cups grated zucchini, squeeze out some water

¾ cup granulated sugar

¼ cup brown sugar

2 tsp vanilla extract

1/3 cup dairy-free butter, melted

¾ cup dairy-free yogurt

2 eggs

2 cups AP flour

½ cup almond meal

1 tsp baking soda

1 ½ tsp baking powder

¼ tsp salt

½ cup semi-sweet chocolate chips

Directions:

Preheat oven to 350 degrees.

In a large mixing bowl combine the zucchini and sugars. Mix to combine.

Add the vanilla, melted butter, yogurt, and eggs. Mix well.

Sift in the dry ingredients and whisk till partially combined. Add in the chocolate chips and mix well.

Pour batter into a greased and parchment lined loaf tin and bake for 60-65 minutes, cover with aluminum foil after 45 minutes if browning too much.
